Aiming at "creation of food products that contribute to mental and physical health," this laboratory evaluates the quality and function of food products as well as the kinetics of their components by using complex and diverse analytical chemistry methods. We are conducting research on the intestinal absorption, disposition, and physiological effects of food components, especially peptides, polyphenols, and volatile components.
