MALDI-TOF MS Microorganism Identification Consortium Activities to Ensure Food Safety and Reduce Food Loss
Summary
A consortium was established in 2019 with Kyushu Sangyo University at its core and the participation of major domestic food companies and analytical institutions, including the Faculty of Agricultural Sciences of Kyushu University, to improve the accuracy of identification of food microorganisms by expanding the MALDI-TOF MS mass spectral library (number of participating institutions: 25). We are working to improve food quality and reduce food loss.
Purpose
With the institutionalization of HACCP, science-based sanitation control is required, and in order to solve urgent common problems in the food industry, such as the identification of microorganisms that can cause harm to raw materials, semi-finished products, and the manufacturing environment in the production and supply of safe, high-quality food, the accuracy and identification rate of the MALDI-TOF MS microbial identification method . The objective of this project is to improve the accuracy and identification rate of the MALDI-TOF MS microorganism identification method.
Details
Kyushu Sangyo University will serve as the core, with the Japan Food Analysis Center and Kyushu University forming the secretariat to build a network among microbiology researchers and practitioners in charge of microbiology management at the participating institutions. The network was established among researchers and practitioners in charge of microbiological control at the participating institutions, and strain data from the participating institutions were accumulated and shared to expand and share the food microorganism database.
