[Topics] Sea urchins cultivated by Associate Professor KURITA Yoshihisa using udon, orange peels, and coffee beans are available for a limited time at Aeon Mall Fukutsu!
The Fishery Research Laboratory of Kyushu University's Graduate School of Bioresource and Bioenvironmental Sciences has been collaborating with Aeon Mall Fukutsu on a public awareness project called "Challenge to Circulation" since last year, aiming to realize a circular regional society.Last year, with the cooperation of restaurants within Aeon Mall Fukutsu, a survey was conducted to identify food waste preferred by sea urchins. As a result, "udon noodles," "orange peels," and "coffee grounds" were selected!
Based on these results, this year we are holding a limited-time event at restaurants within Aeon Mall Fukutsu, in cooperation with the Tsuyazaki Branch of the Munakata Fisheries Cooperative Association, where purple sea urchins raised on these three types of feed will be served!
Event
Menu: Sustainable Sea Urchin Cutlet Set (Base Price: ¥1,500, Tax Included: ¥1,650)
Location: Aeon Mall Fukutsu, "Banshu Tonkatsu Futaba"
Dates: Saturday, November 30th - Sunday, December 1st
Due to limited quantities, we apologize if the item is out of stock.
Due to differences in the sea urchins' intake of feed, the availability of all three types may vary.
Comments from Associate Professor KURITA
This event, which utilizes food waste from restaurants in Aeon Mall Fukutsu as feed for sea urchins and serves them in the same mall's restaurants, is an advanced example of a circular society that has been gaining attention in recent years. We hope you enjoy comparing the different flavors of sea urchin and take a moment to reflect on the future of a circular society.
